Basil Pesto Ricotta Spread

Serve with crudite or on bread.
List of Ingredients
- 2 cups fresh basil leaves
- 2 large cloves roasted garlic
- 1/2 cup Grated Parmesan cheese
- 1/4 cup pine nuts or almonds (optional)
- 1/2 cup olive oil
- 15 oz Ricotta
- Salt & Fresh ground pepper
Instructions
- Combine basil, garlic, nuts and Parmesan in a food processor and mix. With the processor running, slowly add olive oil. Process to desired consistency.
- Blend in ricotta. Season to taste with salt and pepper.
