Bean Cakes with Chili Cheese

- 1/2 cup flour
- 1/2 cup cornmeal
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup cooked beans, roughtly chopped (black turtle beans, Anasazi beans, or pintos)
- 1/2 cup coarsely grated hot pepper Monterey Jack cheese
- 2 T chopped cilantro
- 1/2 tsp salt
- 4 green onions, thinly sliced
- 1/2 cup diced red bell pepper
- 2 eggs, separated
- 1/2 cup buttermilk
Instructions
- Heat a griddle to medium hot.
- In a medium bowl, combine flour, cornmeal, baking powder, baking soda, beans, cheese, cilantro, salt, onions and bell pepper.
- Beat the egg yolks and buttermilk in a small bowl and add to dry ingredients.
- In a separate bowl beat the egg whites until stiff. Fold into bean mixture.
- Brush the griddle with a thin film of oil. Drop the batter onto the pan. Flatten slightly to make a 4" cake. Fry until golden brown on the bottom. Flip over and brown the other side.
- Serve with salsa and sour cream.

Yields: 4 servings for lunch; or 8 to 10 appetizer servings
