    Bite-Size Crustless Quiches

    List of Ingredients


    • 1 T butter
    • 1/2 cup finely chopped red bell pepper
    • 1/4 cup chopped green onion (white & green parts)
    • 3 large eggs
    • 2 T milk
    • 1/2 cup cheddar cheese, grated
    • 1/4 tsp salt
    • 1/8 tsp pepper


    Instructions


    1. Preheat oven to 425 degrees. Grease one tray of 24 mini muffin pan cups.
    2. In small saucepan, melt butter over medium heat. Add bell pepper and onion; saute until soft, about 5 minutes. Remove the pan from the heat and let the mixture cool slightly.
    3. In medium size bowl, combine eggs, milk, cheese, salt and pepper. Stir in bell pepper & onions. Spoon about 1 T of the mixture into each cup. Will fill about 18 to 22 cups.
    4. Bake until centers are set, 8 to 10 minutes. Let quiches cool for 1 minute. Using a knife, loosen the quiches around the edges and remove from the cups.
    5. Arrange on platter and serve.
