Bruschetta with Tomatoes and Basil

- 8 ripe plum tomatoes, chopped
- 3/4 cup chopped fresh basil
- 1 large clove garlic, finely chopped
- 2 Tbsp olive oil
- 1 loaf sourdough bread or baguette
Instructions
- Preheat oven to BROIL, or grill on HIGH.
- Combine tomatoes, basil, garlic, and olive oil in bowl; season to taste with salt and pepper.
- Slice bread 1/2 - 3/4 inch thick; broil or grill on both sides until lightly toasted.
- Spoon tomato mixture, along with juices, on top of bread.
Final Comments
SERVES 30 -40
Option(s):
Sprinkle with grated Parmesan or Asiago cheese. Broil to just melt cheeses, about 1 min. Serve immediately.
