Cheddar and Black Bean Fritters
List of Ingredients
- 1/2 cup yellow cornmeal
- 1/4 cup flour
- 1/4 tsp double-acting baking powder
- 1/4 tsp cayenne
- 1/4 tsp salt
- 1/2 tsp ground cumin
- 1/3 cup milk
- 1 large egg yolk
- 1 cup 1/4" diced extra-sharp Cheddar
- 1 cup canned black beans, rinsed well, drained, & patted dry between layers of paper towels
- 2 large egg whites
- vegetable oil for frying the fritters
- sour cream and salsa, if desired
Instructions
- In bowl whisk together well cornmeal, flour, baking powder, cayenne, salt, and cumin; whisk in milk and yolk, and stir in Cheddar and beans.
- In another bowl beat whites until they hold soft peaks and fold them into Cheddar mixture thoroughly.
- Heat 1/8" of oil in well-seasoned cast-iron or non-stick skillet over moderately high heat until it is hot but not smoking. Working in batches, drop heaping T of batter into skillet, spreading slightly, fry the fritters for 1 minute on each side, or until golden brown, and let drain on paper towels.
- Serve fritters with sour cream and tomato salsa.
Final Comments
Makes about 18 fritters.
