Chilaquilas
List of Ingredients
- 1 lb ground beef
- salt and pepper to taste
- 1 to 2 T chili powder
- 6 green onions with tops, sliced
- 1 can (6 oz) pitted ripe olives, sliced
- 1 can (16 oz) chili beans, undrained
- 1 can (16 oz) tomatoes with liquid, chopped
- 1 package (20 oz) tortilla or corn chips
- 1 to 2 cups (4 to 8 oz) shredded cheddar cheese
Instructions
- In a skillet, brown meat; drain. Add salt, pepper, chili powder, onions, olives, tomatoes and beans. simmer until thickened, about 20 minutes.
- Arrange chips on a platter; top with meat mixture and sprinkle cheese on top. Serve immediately.
