Fusion Black Bean Dip

List of Ingredients
- 2 cloves garlic, peeled
- 2 tbsp fresh lime juice
- 2 tsp fresh ginger, grated
- 1 tbsp tomato paste
- 1 tsp cumin
- 1 tsp chili powder
- 1/4 tsp salt
- 1 tsp hot pepper sauce
- 1/4 c cilantro, roughly chopped
- 2 scallions, diced
- 1 (29 oz) can black beans, rinsed and drained
- 1/2 c tomatoes, chopped
Instructions
- In a food processor, combine garlic, lime juice, ginger, tomato paste, cumin, chili powder, salt, and hot pepper sauce. Process until well combined.
- Add remaining ingredients, except tomato, and pulse a few times until combined but still chunky.
- Transfer dip to a bowl and stir in tomato. Chill in the refrigerator for an hour before serving.
