Garlic Crostini with Fresh Mozzarella

Arrange these tempting, impressive appetizers on a pretty platter, and garnish with sprigs of fresh basil.
List of Ingredients
- 24 (1/2-inch-thick) slices baguette (about 8 oz)
- 1 to 2 tablespoons olive oil
- 2 large cloves garlic
- 1 can (14.5 oz) Muir Glen® organic diced tomatoes, drained
- 3/4 cup diced fresh mozzarella cheese
- 2 tablespoons chopped fresh basil leaves
- 1/4 teaspoon coarse salt (kosher or sea salt)
- 1/4 teaspoon pepper
Instructions
- Heat oven to 425°F. On ungreased cookie sheet, place bread slices. Brush oil on slices of bread. Bake 4 to 5 minutes or until very light golden brown. Cool 5 minutes.
- Cut garlic cloves in half. Rub toasted bread slices with cut sides of garlic.
- Stir together remaining ingredients. Spoon mixture onto toasted bread slices. Serve immediately.
