    List of Ingredients


    • 1 1/2 cups trimmed arugula
    • 1/2 cup grated Parmesan cheese
    • 3 T toasted pine nuts
    • 3 T olive oil
    • 1 tube (13.8 oz) refrigerated pizza dough, like Pillsbury


    Instructions


    1. Heat oven to 400 degrees. In bowl of food processor, combine arugula leaves, grated Parmesan cheese, toasted pine nuts and 1/2 tsp salt 1 min., or until mixture is blended and smooth. With food processor running, slowly drizzle olive oil into arugula mixture until completely blended.
    2. Unroll dough on clean, lightly floured surface. Spread pesto mixture on dough, leaving 1" border. Roll up dough jelly-roll style. Using sharp knife, cut roll into 12 slices.
    3. Place each dough slice, cut side down, in muffin-tin wells coated with cooking spray. Bake 12 min., or until golden brown.

    Makes 12 servings

    HINT:
    While basil is the traditional main ingredient of pesto, peppery arugula is a flavorful substitute. Try tossing it with pasta, stirring it into mayo or using it to top pizza.
