    • 1 tsp cumin seeds
    • 1 tsp fennel seeds
    • 1 tsp coriander seeds
    • ¼ tsp ground cardamom
    • ¼ tsp crushed red pepper flakes
    • ¼ tsp ground nutmeg
    • ¼ tsp ground cinnamon
    • ¼ tsp ground sumac
    • ¼ tsp cayenne pepper
    • 1 tbsp olive oil
    • 1 cup green olives
    • 1 cup black olives
    • 2 tbsp lemon juice
    • 1 tsp lemon zest
    • 2 tbsp orange juice
    • 3 garlic cloves, finely diced


    Instructions


    1. In a 10" fry pan, heat together the olive oil, garlic and spices until aromatic, about 2 to 5 minutes. Add all the olives to the pan, stir to coat, remove from heat. Transfer the olive mixture to a bowl, add the lemon zest, lemon juice, and orange juice. Stir well. Allow mixture to cool, then cover and refrigerate for at least 4 hours.
    2. Store up to 2 weeks. The flavor will improve with time. To serve, drain liquid and serve at room temperature.
