Spiced Olives

- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 tsp coriander seeds
- ¼ tsp ground cardamom
- ¼ tsp crushed red pepper flakes
- ¼ tsp ground nutmeg
- ¼ tsp ground cinnamon
- ¼ tsp ground sumac
- ¼ tsp cayenne pepper
- 1 tbsp olive oil
- 1 cup green olives
- 1 cup black olives
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 2 tbsp orange juice
- 3 garlic cloves, finely diced
Instructions
- In a 10" fry pan, heat together the olive oil, garlic and spices until aromatic, about 2 to 5 minutes. Add all the olives to the pan, stir to coat, remove from heat. Transfer the olive mixture to a bowl, add the lemon zest, lemon juice, and orange juice. Stir well. Allow mixture to cool, then cover and refrigerate for at least 4 hours.
- Store up to 2 weeks. The flavor will improve with time. To serve, drain liquid and serve at room temperature.
