These little nuggets have enough butter and Parmesan cheese to please even the most veggie-averse palates.
List of Ingredients
- One 16-ounce bag chopped frozen spinach, thawed and squeezed very dry in paper towels
- 1 egg plus 1 egg white, lightly beaten
- 1/3 cup Parmesan cheese
- 1 cup breadcrumbs, preferably fresh
- 2 tablespoons melted butter
- Pinch of salt and freshly ground black pepper
Instructions
- Preheat the oven to 350 degrees.
- In a large mixing bowl, stir together all ingredients until well-combined. Using a 1-1/2" ice cream scoop, form into balls (roll them gently in your hands to make them round). Place on a parchment or silpat-lined baking sheet.
- Bake 10 minutes, flip carefully with tongs, and bake 10 to 15 minutes longer, or until golden brown and slightly crisp.
