Stuffed Mushrooms

List of Ingredients
- 12 large white mushrooms
- 2 T butter, divided
- 1/4 cup finely chopped onion
- 2 T finely chopped green bell pepper
- 1/4 tsp salt
- 1/8 tsp ground hot red pepper (cayenne)
- 1 cup fresh bread cubes (1/4")
- 1 T chopped fresh parsley
Instructions
- Preheat oven to 450 degrees. Remove and chop mushroom stems.
- In a large skillet, melt 1 T butter; saute mushrooms, open-side down until lightly browned. Remove mushrooms, open-side up, to shallow roasting pan.
- Add remaining butter to the same skillet along with chopped mushroom stems, the onion, bell pepper, salt, and red pepper. Cook, stirring constantly into onion begins to brown - about 2 minutes. Stir in bread cubes and parsley.
- Divide stuffing mixure among mushroom caps and bake until lightly browned - about 7 minutes. Serve hot.
