    List of Ingredients


    • 12 large white mushrooms
    • 2 T butter, divided
    • 1/4 cup finely chopped onion
    • 2 T finely chopped green bell pepper
    • 1/4 tsp salt
    • 1/8 tsp ground hot red pepper (cayenne)
    • 1 cup fresh bread cubes (1/4")
    • 1 T chopped fresh parsley


    Instructions


    1. Preheat oven to 450 degrees. Remove and chop mushroom stems.
    2. In a large skillet, melt 1 T butter; saute mushrooms, open-side down until lightly browned. Remove mushrooms, open-side up, to shallow roasting pan.
    3. Add remaining butter to the same skillet along with chopped mushroom stems, the onion, bell pepper, salt, and red pepper. Cook, stirring constantly into onion begins to brown - about 2 minutes. Stir in bread cubes and parsley.
    4. Divide stuffing mixure among mushroom caps and bake until lightly browned - about 7 minutes. Serve hot.
