Turkey Calzones

List of Ingredients
- 1 1/4 lb ground turkey, lean
- 1 cup pizza sauce
- 2 T chopped fresh parsley
- 24 oz refrigerated large biscuit dough (2 10-inch tubes)
- 3/4 cup low-fat ricotta cheese
- 1 1/4 cup shredded low-fat mozzarella cheese
- 1 egg white
- 1 T water
- 1/2 cup grated Parmesan cheese
- pizza sauce (additional)
Instructions
- Preheat oven to 400 degrees.
- Cook ground turkey until it crumbles. Remove from heat. Stir in pizza sauce and parsley.
- Place biscuits on lightly floured surface; flatten each into 3" to 4" circle. Place equal amounts of the turkey mixture, ricotta, and mozzarella cheese onto half of each circle. Lightly moisten edges with water; fold circles in half. Gently press to seal and enclose filling. Place filled calzones on baking sheet.
- Combine egg white and water. Brush with egg white mixture; sprinkle with Parmesan cheese, and bake 10 to 15 minutes or until golden brown. Serve with additional pizza sauce.
Final Comments
Yield: 20 servings
For entertaining: place on a serving tray and scatter ripe olives, green olives, pepperoncinis, cherry peppers, cherry tomatoes, and mozzarella cubes between calzones, if desired.
