    List of Ingredients


    • 1 1/4 lb ground turkey, lean
    • 1 cup pizza sauce
    • 2 T chopped fresh parsley
    • 24 oz refrigerated large biscuit dough (2 10-inch tubes)
    • 3/4 cup low-fat ricotta cheese
    • 1 1/4 cup shredded low-fat mozzarella cheese
    • 1 egg white
    • 1 T water
    • 1/2 cup grated Parmesan cheese
    • pizza sauce (additional)


    Instructions


    1. Preheat oven to 400 degrees.
    2. Cook ground turkey until it crumbles. Remove from heat. Stir in pizza sauce and parsley.
    3. Place biscuits on lightly floured surface; flatten each into 3" to 4" circle. Place equal amounts of the turkey mixture, ricotta, and mozzarella cheese onto half of each circle. Lightly moisten edges with water; fold circles in half. Gently press to seal and enclose filling. Place filled calzones on baking sheet.
    4. Combine egg white and water. Brush with egg white mixture; sprinkle with Parmesan cheese, and bake 10 to 15 minutes or until golden brown. Serve with additional pizza sauce.


    Final Comments


    Yield: 20 servings

    For entertaining: place on a serving tray and scatter ripe olives, green olives, pepperoncinis, cherry peppers, cherry tomatoes, and mozzarella cubes between calzones, if desired.
