Wicked-Good White Bean Dip

List of Ingredients
- 8 cloves garlic, peeled and halved
- 2 T extra-virgin olive oil
- 2 (15 oz) cans white beans, drained and rinsed
- 2 tsp red wine vinegar
- 1/2 tsp salt
- 1 T chopped fresh parsley (optional)
Instructions
- Carefully saute garlic in olive oil in saute pan over medium heat, without browning, about 10-15 minutes.
- Transfer garlic oil to a food processor. Add beans, vinegar, salt and puree until smooth.
- Spoon into a serving bowl. Sprinkle with parsley and serve with crostinit, toasted pita or crudites.
