    Wicked-Good White Bean Dip

    List of Ingredients


    • 8 cloves garlic, peeled and halved
    • 2 T extra-virgin olive oil
    • 2 (15 oz) cans white beans, drained and rinsed
    • 2 tsp red wine vinegar
    • 1/2 tsp salt
    • 1 T chopped fresh parsley (optional)


    Instructions


    1. Carefully saute garlic in olive oil in saute pan over medium heat, without browning, about 10-15 minutes.
    2. Transfer garlic oil to a food processor. Add beans, vinegar, salt and puree until smooth.
    3. Spoon into a serving bowl. Sprinkle with parsley and serve with crostinit, toasted pita or crudites.
