    Wisconsin Asiago Cheese Puffs

    List of Ingredients


    • 1 tablespoon butter
    • 1 tablespoon olive oil
    • 1/2 teaspoon salt
    • Cayenne pepper to taste
    • 1 cup water
    • 1 cup flour
    • 4 eggs*
    • 1/2 cup (2 ounces) finely shredded Wisconsin Asiago cheese
    • 1/2 cup (2 ounces) grated Wisconsin Parmesan cheese


    Instructions


    1. Preheat oven to 400°F.
    2. In small saucepan, combine butter, oil, salt, cayenne and water; bring to a boil. Add flour all at once; stir until mixture forms a smooth ball. Cook over low heat until mixture is drier but still smooth. Put mixture into mixing bowl; beat in eggs, one at a time. Stir in cheeses.
    3. Drop spoonfuls of batter onto greased cookie sheet. Bake for 20 minutes or until slightly browned and firm. Serve immediately.


    Final Comments


    Makes 30 puffs

    *For lighter puffs, use 2 whole eggs and 4 egg whites
