"Good for You" Turkey Nachos

- 3 T lime juice
- 2 T olive oil
- 1 tsp ground cumin
- 1 tsp garlic powder
- 2 cups cooked ground turkey or turkey breast, coarsely chopped
- salt and pepper, to taste
- 1 (10 oz) pkg large tortilla chips, white, yellow or blue
- 16 fluid oz fat-free refried beans
- 2 cups reduced fat shredded Monterey Jack or Cheddar cheese
- 2 cups salsa
- fat-free sour cream
Instructions
- Preheat oven to 425 degrees.
- Whisk together lime juice, olive oil, cumin and garlic powder; toss with turkey in a small bowl and season with salt and pepper.
- Make a layer of tortilla chips to cover the bottom of a large 12" to 14" round or oval baking dish. Evenly spoon refried beans over chips. Top with turkey and sprinkle with 1 cup shredded cheese.
- Make another layer of tortilla chips. Spoon half the salsa evenly over chips. Top with remaining cup of cheese.
- Bake nachos 15-20 minutes or until heated through and cheese melts and begins to bubble.
- Serve hot with remaining salsa and sour cream, if desired.

For serving: For a casual, but fun look, bake nachos in a large skillet and serve in skillet with a colorful napkin tied on the handle.
