Recipe Introduction
Nothing says "party" better than a dazzling, ruby-red bowl of refreshing punch embellished with a pretty ice ring.
List of Ingredients
- 2 quarts cranberry juice cocktail, chilled
- 2 liters ginger ale, chilled
- 1 liter club soda, chilled
- 1/2 cup fresh lime juice (from about 4 limes)
- 2 tablespoons sugar
- Fresh mint sprigs for garnish
- For Ice Cubes or Ice Ring:
- Fresh or frozen cranberries
- Lime wedges or slices
- Fresh mint sprigs
Instructions
- Pour all of the liquids into a punch bowl. Stir in the sugar until thoroughly dissolved. Add the ice (see instructions below) and mint. Serve immediately.
- To make party ice cubes, place a couple of cranberries and a small lime wedge, or a tiny mint sprig, in each section of 2 ice cube trays. Fill the trays with water; freeze.
- For an ice ring, fill a ring mold with a thin layer of water. Drop in cranberries, lime slices or wedges and mint sprigs; freeze. Fill ring mold almost to the top with water and freeze. To serve, dip the mold briefly in hot water and unmold.
Final Comments
Serves 12 (makes about 5 quarts)
You can make the ice ring or ice cubes up to 1 week ahead of time; simply wrap the ring in foil or put the cubes in a freezer bag and freeze.
