    Bear Moon Oatmeal Molasses Bread

    • 2 cups boiling water
    • 1 cup oatmeal
    • 1 1/2 T oil
    • 1 T instant dry yeast
    • 3 cups water
    • 3 cups molasses
    • 2 tsp salt
    • 5 cups whole-wheat flour
    • egg wash (1 egg mixed with 2 T water)


    Instructions


    1. Combine water, oatmeal, oil, yeast, water, molasses, salt and flour in heavy-duty mixer. Mix with a dough hook, adding flour if necessary to allow dough to clean the sides. Knead with mixer for about 8 minutes. Place in a lightly oiled bowl and cover.
    2. Let rise until doubled in size. Form into two loaves. Let rise again. Mark the top with a razor or sharp knife. Brush top of loaf with egg wash.
    3. Bake in preheated 350 degree oven 39 minutes, or until the internal temperature of bread on a thermometer reaches 200 degrees.

    Makes 2 loaves

    This recipes works well for rolls: Cut dough into large golf-ball-sized pieces and form into balls. Bake about 22 minutes.
