Bear Moon Oatmeal Molasses Bread

- 2 cups boiling water
- 1 cup oatmeal
- 1 1/2 T oil
- 1 T instant dry yeast
- 3 cups water
- 3 cups molasses
- 2 tsp salt
- 5 cups whole-wheat flour
- egg wash (1 egg mixed with 2 T water)
Instructions
- Combine water, oatmeal, oil, yeast, water, molasses, salt and flour in heavy-duty mixer. Mix with a dough hook, adding flour if necessary to allow dough to clean the sides. Knead with mixer for about 8 minutes. Place in a lightly oiled bowl and cover.
- Let rise until doubled in size. Form into two loaves. Let rise again. Mark the top with a razor or sharp knife. Brush top of loaf with egg wash.
- Bake in preheated 350 degree oven 39 minutes, or until the internal temperature of bread on a thermometer reaches 200 degrees.
Final Comments
Makes 2 loaves
This recipes works well for rolls: Cut dough into large golf-ball-sized pieces and form into balls. Bake about 22 minutes.
