Blueberry Coffee Cake Muffins

- 3/4 cup unsalted butter, at room temperature
- 1 1/2 cups sugar
- 3 extra-large eggs, at room temperature
- 1 cup sour cream
- 1/4 cup milk
- 1 1/2 teaspoons vanilla
- 2 1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon Kosher salt
- 1 pint fresh blueberries
Instructions
- Preheat oven to 350 degrees. Place 16 paper liners in muffin tins.
- In a bowl, with an electric mixer, beat butter and sugar until light and fluffy, about 5 minutes. With mixer on low speed, add eggs one at a time. Add sour cream, milk and vanilla.
- In a separate bowl, sift together flour, baking powder, baking soda and salt. With mixer on low speed, add the flour mixture to the batter and beat just until mixed. Fold in blueberries with a spatula, making sure the batter is completely mixed. Fill muffin tins.
- Bake 25 to 30 minutes, or until lightly browned on top and a toothpick inserted into the center of a muffin comes out clean.
