Buttermilk Cornbread

- corn oil, as needed
- 2 cups corn meal
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 1/2 teaspoons salt
- 2 eggs
- 2 tablespoons corn oil
- 1 1/2 cups buttermilk
Instructions
- Rub corn oil in a large, well seasoned iron skillet. Place in middle rack of oven at 400 degrees F.
- Mix dry ingredients. Add remaining ingredients and mix well. Batter should be fairly thin.
- Remove hot skillet from oven and pour batter in the skillet. Let sit about 10 seconds. Bake in oven for 20 to 25 minutes. If a darker brown crust is desired, place the skillet under broiler watching closely until it becomes as brown as you like.
