    List of Ingredients


    • corn oil, as needed
    • 2 cups corn meal
    • 1/2 cup flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon baking soda
    • 1 1/2 teaspoons salt
    • 2 eggs
    • 2 tablespoons corn oil
    • 1 1/2 cups buttermilk


    Instructions


    1. Rub corn oil in a large, well seasoned iron skillet. Place in middle rack of oven at 400 degrees F.
    2. Mix dry ingredients. Add remaining ingredients and mix well. Batter should be fairly thin.

    3. Remove hot skillet from oven and pour batter in the skillet. Let sit about 10 seconds. Bake in oven for 20 to 25 minutes. If a darker brown crust is desired, place the skillet under broiler watching closely until it becomes as brown as you like.
