    Cape Cod Cranberry Scones

    List of Ingredients


    • 3/4 cup butter or margarine
    • 2-1/2 cups self-rising flour
    • 1 cup cranberries, coarsely chopped
    • 2 teaspoons grated orange rind
    • 2/3 cup sugar
    • 1/2 cup buttermilk


    Instructions


    1. Preheat oven to 400°F. Spray a large baking sheet with non-stick vegetable spray.

    2. In a large mixing bowl, cut butter into flour until mixture resembles coarse crumbs. Toss in cranberries, orange rind, and sugar. Add buttermilk, stirring just until moistened. Turn out onto a lightly floured board; knead gently 4 or 5 times. Divide dough in half; shape each piece into an 8-inch circle. Cut into 8 wedges; place on prepared baking sheet.

    3. Bake 12 to 15 minutes or until lightly browned.
