    • 1-1/2 cups cornmeal
    • 1 teaspoons baking powder
    • 3/4 teaspoon baking soda
    • 1/2 teaspoon sugar
    • 1/2 teaspoon salt
    • 1-1/2 cups buttermilk
    • 1 egg, lightly beaten


    Instructions


    1. Preheat oven to 400°F. Grease cast iron corn stick pans with shortening. Place in oven and heat.

    2. In a large mixing bowl, combine cornmeal, baking powder, soda, sugar, and salt; mix well. Stir in buttermilk and egg. Fill corn stick pans two-thirds full.

    3. Bake for 25 minutes or until lightly browned. Serve hot.
