Cinnamon Orange Bread

- 3 large eggs
- 1/2 cup butter, softened
- 1 cup unsweetened orange juice
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tsp cinnamon
- 3/4 cup chopped pecans
- Topping:
- 1/2 pint heavy cream
- 1/2 tsp orange extract
Instructions
- Preheat oven to 325 degrees. Coat a 9x5-inch loaf pan with oil and flour. Set aside.
- In a large mixing bowl, whisk together eggs, butter, orange juice, flour, baking soda, baking powder and cinnamon. After mixture is well mixed, add the pecans.
- Pour mixture into prepared pan and evenly distribute the mixture in the pan. Bake for 55 minutes.
- Cool on wire rack. While cooling, begin the topping. In a medium mixing bowl, add cream and orange extract and beat unti light and fluffy. Use the topping to spoon over warm bread slices.
