Gingerbread Muffins

- 1 cup butter, softened
- 1/2 cup brown sugar
- 4 eggs
- 2 1/2 cups all-purpose flour
- 1 cup molasses
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 cup buttermilk
- 2 teaspoons ground ginger
- 2 cups whole-wheat flour
Instructions
- Preheat heat oven to 350 degrees.
- Cream butter and sugar; add eggs, one at a time, beating after each. Add molasses. Sift flour, baking soda and spices; add alternately with buttermilk. Fill greased muffin pans 2/3 full and bake for 15 minutes.
