Lemon Blueberry Biscuits

- 2 cups self-rising flour
- 1/3 cup sugar
- 1 8-ounce carton lemon yogurt
- 1 egg, lightly beaten
- 1/4 cup butter or margarine, melted
- 1 teaspoon grated lemon rind
- 1 cup blueberries
- Lemon Glaze (below)
Instructions
- Preheat oven to 400°F. Spray a baking sheet with non-stick vegetable spray.
- In a large bowl, combine flour and sugar.
- In a medium bowl, combine yogurt, egg, butter, and lemon rind; stir until well blended. Add to flour mixture stirring until just moistened. Stir in blueberries. Drop by tablespoonfuls onto prepared baking sheet.
- Bake 15 to 20 minutes or until lightly browned. Drizzle Lemon Glaze over the warm biscuits.

1/2 cup confectioners' sugar
1 tablespoon lemon juice
1/2 teaspoon grated lemon rind
In a small bowl, combine all ingredients; mix until smooth.
