    Lemon Blueberry Biscuits

    List of Ingredients


    • 2 cups self-rising flour
    • 1/3 cup sugar
    • 1 8-ounce carton lemon yogurt
    • 1 egg, lightly beaten
    • 1/4 cup butter or margarine, melted
    • 1 teaspoon grated lemon rind
    • 1 cup blueberries
    • Lemon Glaze (below)


    Instructions


    1. Preheat oven to 400°F. Spray a baking sheet with non-stick vegetable spray.

    2. In a large bowl, combine flour and sugar.

    3. In a medium bowl, combine yogurt, egg, butter, and lemon rind; stir until well blended. Add to flour mixture stirring until just moistened. Stir in blueberries. Drop by tablespoonfuls onto prepared baking sheet.

    4. Bake 15 to 20 minutes or until lightly browned. Drizzle Lemon Glaze over the warm biscuits.

    Yield: 12 servings

    LEMON GLAZE
    1/2 cup confectioners' sugar
    1 tablespoon lemon juice
    1/2 teaspoon grated lemon rind

    In a small bowl, combine all ingredients; mix until smooth.
