Lemon Yogurt-Poppy Seed Muffins

- 1/3 cup milk
- 1/4 cup vegetable oil
- 1 container (6 oz) Yoplait original lemon low-fat yogurt
- 1 egg
- 1 3/4 cups all-purpose flour
- 1/4 cup sugar
- 2 T poppy seed
- 1 T grated lemon peel
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- Lemon Glaze(below)
Instructions
- Preheat oven to 400 degrees. Grease bottoms only of 12 regular size muffin cups, or place paper baking cups in muffin cups.
- Beat milk, oil, yogurt and egg in large bowl. Stir in remaining ingredients except Lemon Glaze just until flour is moistened. Divide batter evenly among muffin cups.
- Bake 16 to 18 minutes or until golden brown. Immediately remove from pan. Drizzle Lemon Glaze over warm muffins.
Final Comments
Makes 12 muffins
Lemon Glaze: 1/2 cup powdered sugar, 2 to 3 tsp lemon juice
Mix until smooth and drizzling consistency.
