    Lemon Yogurt-Poppy Seed Muffins

    List of Ingredients


    • 1/3 cup milk
    • 1/4 cup vegetable oil
    • 1 container (6 oz) Yoplait original lemon low-fat yogurt
    • 1 egg
    • 1 3/4 cups all-purpose flour
    • 1/4 cup sugar
    • 2 T poppy seed
    • 1 T grated lemon peel
    • 2 1/2 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • Lemon Glaze(below)


    Instructions


    1. Preheat oven to 400 degrees. Grease bottoms only of 12 regular size muffin cups, or place paper baking cups in muffin cups.
    2. Beat milk, oil, yogurt and egg in large bowl. Stir in remaining ingredients except Lemon Glaze just until flour is moistened. Divide batter evenly among muffin cups.
    3. Bake 16 to 18 minutes or until golden brown. Immediately remove from pan. Drizzle Lemon Glaze over warm muffins.


    Final Comments


    Makes 12 muffins

    Lemon Glaze: 1/2 cup powdered sugar, 2 to 3 tsp lemon juice
    Mix until smooth and drizzling consistency.
