Maple Corn Bread with Honey Butter

- 1 1/3 cups sifted all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup cornmeal
- 2/3 cup milk
- 1/3 cup maple syrup
- 2 eggs, lightly beaten
- 1/4 cup butter, melted
- 1/4 cup maple syrup
- 1/2 cup walnuts, coarsely chopped
Instructions
- Heat oven to 375 degrees F. Grease 9 inch square cake pan.
- Sift flour, baking powder and salt into a large mixing bowl. Stir in cornmeal with fork. Combine milk, 1/3 cup maple syrup, butter and eggs; add to dry ingredients. Stir in just until blended. Spoon into pan and smooth. Drizzle remaining 1/4 cup maple syrup over batter. Sprinkle with walnuts.
- Bake for 25 minutes or until a toothpick comes out clean.

Honey Butter
Ingredients:
1/2 pound butter (2 sticks), softened
2 tablespoons honey
1/4 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
Preparation:
Combine the ingredients in your mixer that has a whisk attached and blend for about 3 minutes, scrapping the sides of the bowl 3 times. Remove the butter from the bowl and spoon onto parchment paper or plastic wrap. Roll into a 1 inch diameter log and refrigerate for 2 hours or freeze for later use.
