Maple Pecan Muffins

- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 1/2 tsps baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 beaten egg
- 3/4 cup milk
- 1/3 cup cooking oil
- 1/3 cup maple syrup or maple-flavored syrup
- 1/2 cup chopped pecans
- 1/2 cup sifted powered sugar
- 1 T maple syrup or maple-flavored syrup
Instructions
- Grease twelve 2 1/2-inch muffin cups. Set muffin cups aside.
- In a bowl stir together all-purpose flour, whole wheat flour, baking powder, baking soda, and salt. Make a well in the center of the dry mixture.
- In a medium mixing bowl, combine egg, milk, cooking oil, and 1/3 cup syrup. Add egg mixture all at once to dry mixture. Stir just till moistened (batter should be lumpy). fold in chopped pecans.
- Spoon batter into the prepared muffin cups, filling each 2/3 full. Bake in a 400 oven about 20 minutes or till done. Transfer muffins from muffin cups to a wire rack. In a small bowl combine powdered sugar, the 1 T syrup, and 1 tsp water; drizzle over muffins. Cool slightly before serving.
