Orange Poppy Seed Scones

- 2-1/4 cups self-rising flour
- 1/2 cup sugar
- 1/4 cup poppy seeds
- 1/2 cup butter or margarine
- 1/4 cup orange juice
- 1 egg
- 1 teaspoon grated orange rind
Instructions
- Preheat oven to 375°F. Spray a large baking sheet with non-stick vegetable spray.
- In a large mixing bowl, combine flour, sugar, and poppy seeds; cut in butter until mixture resembles coarse crumbs. In a small bowl, combine orange juice and egg, beating until well blended; add to the flour mixture, stirring until dough forms. Turn out onto a lightly floured board, knead gently until smooth. Divide dough in half; form into 8-inch circles. Cut each round into 8 wedges. Place on prepared baking sheet.
- Bake 15 to 20 minutes or until golden brown.
