Oatmeal Soda Bread

List of Ingredients
- 1 2/3 cups all-purpose flour
- 3/4 cup quick-cooking rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 T margarine or butter
- 1 beaten egg
- 2/3 cup buttermilk
- 1 beaten egg
Instructions
- Grease a baking sheet; set aside.
- In a large mixing bowl stir together flour, oats, baking powder, baking soda, and salt.
- Using a pastry blender, cut in margarine or butter till mixture resembles coarse crumbs.
- Make a well in center of the dry mixture. Stir together one beaten egg and buttermilk, then add mixture all at once to the dry mixture. Using a fork, stir just till moistened. (Dough will be sticky.)
- Turn the dough out onto a well-floured surface. Quickly knead dough by gently folding and pressing dough for 10 to 12 strokes or till dough is nearly smooth.
- On the prepared baking sheet, shape dough into a 6-inch-round loaf. On the top of the loaf, cut a 4-inch cross, 1/4 inch deep. Brush with the one remaining beaten egg.
- Bake in a 375 oven about 35 minutes or till done. Remove from baking sheet and serve warm.

Makes 1 loaf
Raisin-Oatmeal Soda Bread: Prepare Oatmeal Soda Bread as directed above, except stir 2 T brown sugar and, if desired, 1 tsp ground cinnamon into the dry mixture. Stir 1/3 cup raisins, dried currants, or snipped dried apricots into the buttermilk mixture.
