Pumpkin Cranberry Muffins

- 2 cups pumpkin puree
- 3 cups granulated sugar
- 1 cup buttermilk
- 1 cup vegetable oil
- 4 whole eggs
- 3 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp baking powder
- 2 tsps cinnamon
- 2 tsp ground ginger
- 1/2 ground tsp nutmeg
- 3/4 tsp ground cloves
- 1 tsp salt
- 1 cup finely chopped pecans, toasted and cooled
- 1 cup dried cranberries (Craisins)
Instructions
- Preheat oven to 350 degrees. Generously grease miniature muffin pan.
- Mix together the pumpkin and sugar. Stir in the oil and buttermilk. Beat the eggs lightly and add to the mixture.
- Mix together flour, soda, baking powder, spices and salt. Add to the pumpkin mix and stir in until just moistened. Stir in the pecans and cranberries.
- Scoop in muffin pan. Bake about 20 to 25 minutes.
