List of Ingredients
- 1 1/3 cups flour
- 3/4 cup buckwheat or whole wheat flour
- 1/3 cup sugar
- 1 1/2 tsps baking powder
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 slightly beaten eggs
- 1 cup canned pumpkin
- 1/2 cup fat-free milk
- 1/2 tsp finely shredded orange peel
- 1/4 cup orange juice
- 2 T cooking oil
Instructions
- Grease twelve 2 1/2" muffin cups; set aside. In a medium bowl combine flour, buckwheat flour, sugar, baking powder, cinnamon, baking soda, and salt. Set aside.
- In another medium bowl combine eggs, pumpkin, milk, orange peel, orange juice, and oil. Add all at once to flour mixture; stir just until moistened (batter should be lumpy).
- Spoon batter into prepared muffin cups. Bake in a 400 degree oven for 1 to 20 minutes or until muffins are light brown. Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups. Serve warm.
