Scones and Lemon Butter

- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup sugar
- 6 T cold butter
- 1 egg
- 1/2 cup buttermilk
- 1 1/2 tsp pure vanilla
Instructions
- Combine first 5 ingredients. Cut in butter. Combine egg, buttermilk, and vanilla. Add to dry mixture and stir till all is well mixed.
- Drop by T on parchment lined cookie sheet. Bake at 400 degrees for 12-15 minutes. Serve with butter and jam or Lemon Butter.
Final Comments
Lemon Butter:
1 stick butter, 4 eggs, pinch of salt, 2 cups sugar, 3 lemons (juice and peel)
Melt butter in top of double boiler. Beat eggs with pinch of salt. Beat in sugar slowly till dissolved and eggs are lemon colored (5-8 minutes). Add juice and peel. Beat several minutes. Cook and stir till thick. Store in glass jars in the refrigerator. Will keep for several weeks. Use on scones, muffins, coffeecakes, and to fill tart shells.
