Zucchini Bread

Recipe Introduction
A moist, sweet bread that is a great with any soup or salad.
List of Ingredients
- 3 eggs (or 2 eggs & 2 egg whites)
- 2 cups sugar (can use less)
- 1/3 cup oil (or 1/3 cup unsweetened applesauce)
- 2 cup Stonyfield lowfat plain yogurt
- 2 teaspoons cinnamon
- 2 cups grated zucchini (or 1 cup zucchini & 1 cup carrots, shredded)
- 3 teaspoons vanilla
- 3 cups flour (I use whole wheat pastry flour)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
Instructions
- Preheat oven to 400°F.
- Beat eggs until foamy, add sugar, oil, yogurt, cinnamon, zucchini and vanilla and mix well
- In a separate bowl sift together flour, salt, baking soda and baking powder.
- Add dry ingredients slowly to the yogurt mixture and mix until moist.
- Pour into 2 greased and floured loaf pans. Bake for 35-40 minutes.
- Loaves should be golden brown on top. Makes two loaves, with 12 slices each.
