Bittersweet Chocolate Cappuccino Bars

Recipe Introduction
If you prefer fudgy brownies over cakelike ones, you'll love this bar. Serve squares of these very dense and very chocolaty brownies with a dollop of whipped cream, or cut them into small bars and serve them with other selections on a cookie tray.
List of Ingredients
- 1 1/4 cups unsalted butter, softened
- 2 cups sugar
- 2 eggs
- 1/3 cup cappuccino or strong coffee, cold
- 2 tsps vanilla extract
- 3 cups all-purpose flour
- 3/4 cup unsweetened Dutch-processed cocoa
- 1 tsp baking soda
- 1/2 tsp salt
- 12 oz bittersweet chocolate, coarsely chopped
Instructions
- Heat oven to 350. Grease 13x9-inch pan. In large bowl, beat butter until smooth. Slowly add sugar; beat until fluffy. Add eggs one at a time, beating well after each addition. Add cappuccino and vanilla; beat until well-blended.
- In medium bowl, combine flour, cocoa, baking soda and salt. Add to butter mixture; mix just until blended. Stir in chocolate. Spoon and spread in pan.
- Bake 20 to 25 minutes or until toothpcik inserted in center comes out with a few crumbs attached. Cool 20 minutes. Cut into bars. Cool completely before serving.
