Cappuccino Brownies

- 2 pounds semisweet chocolate chips
- 1/4 cup instant coffee granules
- 1 cup unsalted butter
- 2 cups white sugar
- 8 eggs
- 3 tablespoons vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 2 cups all-purpose flour
Instructions
- Preheat the oven to 375 degrees F (190 degrees C).
- Place the chocolate chips and the coffee granules in a double boiler over simmering water. Cook over medium heat until the chocolate melts, stirring occasionally.
- Beat the butter in a bowl until fluffy. Add the sugar gradually, beating constantly and scraping sides of bowl as necessary. Beat in the eggs 2 at a time. Beat for 3 minutes or until the mixture is pale yellow.
- Add the vanilla, cinnamon and salt and mix well.
- Beat in the chocolate mixture until combined. Beat in the flour until smooth and creamy.
- Spoon the batter into 4 lightly greased and floured 8 inch square baking pans. Bake for 35 minutes or until the edges pull from the sides of the pans. Cool on a wire rack. Chill, covered, for 8 to 12 hours. Cut the cold brownies into bars to serve.
