- Crust:
- 1/3 cup firmly packed brown sugar
- 1/4 cup butter
- 1 cup flour
- 1/4 tsp salt
- Topping:
- 1/2 cup butterscotch flavored chips
- 1/4 cup light corn syrup
- 2 T butter
- 1 cup chopped salted cashews
Instructions
- Preheat oven to 350 degrees.
- Place brown sugar in medium bowl. Cut in 1/4 cup butter with pastry blender until mixture resembles coarse crumbs. Add flour and salt. Mix well. Press mixture onto bottom of ungreased 8" square baking pan. Bake for 11 minutes or until set.
- Meanwhile, melt butterscotch chips, corn syrup, and 2 T butter in a 2 quart saucepan over low heat. Stir occasionally until smooth, about 2 to 3 minutes. Do not boil. Remove from heat. Stir in cashews. Pour cashew mixture over hot, partially crust. Continue baking for 8 to 10 minutes or until mixture is bubbly and set.
- Cool completely. Cover and store in the refrigerator. Cut into bars.
