Chocolate Chip Oatmeal Walnut Bars

Recipe Introduction
Whole wheat flour and oatmeal add whole-grain goodness to scrumptious, chewy chocolate chip bars.
List of Ingredients
- 1 cup butter, softened
- 3/4 cup packed brown sugar
- 1/2 cup sugar
- 2 tsps vanilla extract
- 2 eggs
- 1 1/4 cups old-fashioned rolled oats
- 1 cup whole wheat flour
- 1/4 cup all-purpose flour
- 1 tsp baking soda
- dash salt
- 1 (12 oz) pkg chocolate chips
- 1 1/2 cups chopped walnuts, toasted*
Instructions
- Heat oven to 375. In large bowl, beat butter at medium speed until soft and smooth. Add brown sugar, sugar and vanilla; blend well. Add eggs one at a time, beating well after each addition.
- In medium bowl, stir together oats, whole wheat flour, all-purpose flour, baking soda and salt.
- Slowly add flour mixture to butter mixture, beating until well blended. Stir in chocolate chips and walnuts. Spoon and spread dough in ungreased 15x10x1-inch pan.
- Bake 15 to 20 minutes or until golden brown; cool on wire rack.
Final Comments
Makes 48 bars
*To toast nuts, place on baking sheet; bake at 375 for 4 to 6 minutes or until pale brown and fragrant.
