Pecan Bars

Recipe Introduction
These chewy, sweet tasting pecan bars are always a hit with men. They are made on a large sheet pan, then cut into 2" squares. Great for breakfast or mid-morning snack with a cup of coffee.
List of Ingredients
- 1 lb. light brown sugar
- 4 large eggs, slightly beaten
- 1 tsp. salt
- 2 cups pecans, chopped
- 2 tsp. vanilla
- 2 cups all-purpose flour
- 2 tsp. baking powder
Instructions
- In a large saucepan on medium low heat, add the brown sugar and eggs.
- Heat until the sugar is melted, no longer.
- Remove from the heat and add the remaining ingredients. Stir to mix well with a large spoon.
- Pour batter into a buttered, floured cookie pan that has sides. Pour batter so that it is 1/2" inch thick.
- Bake for 15 minutes at 350 degrees. Check with a toothpick.
- Remove, let cool and cut into 2" squares. Store in an airtight container.
