Applesauce-Spice Cake

This is a good weeknight dessert.
List of Ingredients
- 1 cup flour
- 1/2 cup light brown sugar
- 1 tsp baking soda
- 1 tsp pumpkin pie spice
- pinch of salt
- 1/2 cup unsweetened applesauce
- 1/2 cup vegetable oil
- 1/4 cup molasses
Instructions
- Preheat oven to 350 degrees. Grease an 8" square, metal baking pan. Add flour, sugar, baking soda, pumpkin pie spice and salt to pan; mix.
- Combine applesauce, oil and molasses in a measuring cup. Stir into flour mixture with a rubber spatula until blended; smooth top. Bake until springy, for about 25 minutes. Let cool completely, for about 30 minutes.

Enjoy this spice cake just as it is, or try it with one of these easy-to-make frostings for an extra treat.
*Cream-Cheese Frosting: Beat 4 oz cream cheese and 1/2 stick soft, unsalted butter with an electric mixer. (Make sure to use a brick of cream cheese, not the whipped kind.) Gradually beat in 2 cups confectioners' sugar, 1 T 2% milk, 1 tsp vanilla and 1/4 tsp salt. Spread over cooled cake.
*Chocolate Frosting: For a simple chocolate sauce, heat 2 oz semisweet chocolate and 2/3 cup heavy cream in a small saucepan over medium-low heat, whisking constantly until smooth. (You can use chips or a chopped bar.) Remove from heat. Stir in 1 T unsalted butter and 1 tsp vanilla.
