- 1 1/4 cups Butter flavor Crisco
- 2 cups sugar
- 5 eggs
- 2 1/2 cups all purpose flour
- 1 1/4 tsp baking powder
- 1/2 tsp salt
- 2/3 cup milk
- 1 tsp vanilla
- 1 tsp lemon extract
- 2 medium bananas, well mashed
Instructions
- Preheat oven to 325 degrees. Grease and flour bundt pan and set aside.
- Blend Crisco and sugar thoroughly. Add eggs, one at a time, beating well after each addition.
- Combine flour, baking powder and salt. Add alternately with milk, vanilla and lemon extract to shortening-sugar mixture. Beat until mixture is smooth.
- Add mashed bananas and mix till well combined.
- Pour batter into prepared bundt pan. Bake at 325 degrees for 1 hour or until cake test done.
- Cool 1 hour; remove cake from pan and cool completely on wire rack.
