List of Ingredients
- Cake:
- 3 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/8 teaspoon nutmeg
- 1/2 cup hot coffee
- 1 cup honey
- 4 large eggs
- 1 cup sugar
- 2 tablespoons oil
- 1/2 cup chopped pecans or walnuts
- Brown Butter Honey Frosting:
- 3 tablespoons butter
- 1 1/2 cups confectioners’ sugar, sifted
- 1 to 2 tablespoons milk
- 1 teaspoon vanilla
- 1/8 teaspoon honey
Instructions
- Preheat oven to 350 degrees. Lightly grease a tube pan.
- Sift flour, baking powder, baking soda, salt, cinnamon, cloves and nutmeg together.
- Add hot coffee to honey.
- Beat eggs with sugar until very pale yellow; add oil and beat well.
- Alternately add flour mixture and honey to egg mixture; begin and end with flour mixture. Beat well after each addition. Stir in the nuts.
- Pour into prepared pan. Bake 50 to 60 minutes or until tests done in the center. Cool on wire rack. Turn out onto cake plate when cooled.
- For Brown Butter Honey Frosting, melt butter in a small saucepan over medium heat. Cook, stirring constantly, until golden brown.
- Remove from heat. Transfer to a bowl. Add confectioners’ sugar, milk, vanilla and honey; beat until smooth. Frost top of cooled cake.
