    This recipe is so very good - it borders on the edge of tasing like an egg custard. And it has a bonus - it's easy!


    List of Ingredients


    • 1/2 cup (1 stick) butter
    • 1 1/2 cups sugar
    • 5 eggs, beaten
    • 3/4 cup buttermilk
    • 1 cup grated coconut
    • 1 tsp pure vanilla extract
    • 2 unbaked 9-inch pie shells


    Instructions


    1. Preheat oven to 350 degrees.
    2. Melt butter; pour sugar in a bowl, and blend.
    3. Add remaining ingredients and mix well.
    4. Pour equal amounts of mixture into pie shells.
    5. Bake for 45 to 50 minutes or until set and golden brown.
