Coconut Pound Cake

- 3 sticks butter, softened
- 2 cups sugar
- 1 cup brown sugar
- 6 eggs, room temperature
- 2 tsp coconut extract
- 1/2 tsp almond extract
- 3 cups cake flour
- 1/2 tsp baking powder
- 1 cup Coconut Milk
Instructions
- Preheat oven to 325°F
- Grease and flour 2 loaf pans or a bundt pan.
- In large mixing bowl, cream butter, sugar and brown sugar until very fluffy, about 3-4 minutes.
- Beat in eggs, one at a time, beating well after each addition.
- Beat in coconut extract and almond extract.
- Stir together flour and baking powder.
- Add flour mixture to butter/sugar mixture alternately with Coconut Milk, beating well after each addition.
- Pour batter into pan(s) filling no more than 3/4 full.
- Bake in middle of oven 1 hour and 10 minutes or until inserted toothpick comes out clean.
