- 1 1/2 cups flour
- 1 T cocoa
- 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 1/4 tsp kosher salt
- 2 tsp ground ginger
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 lb unsalted butter, at room temperature
- 1/4 cup sugar
- 1/2 cup dark brown sugar
- 1/2 cup sour cream
- 1/2 cup molasses
- 2 large eggs
- 2 T finely grated, peeled fresh gingerroot
- confectioners' sugar, to serve
Instructions
- Preheat oven to 350 degrees. Butter a 9" square baking pan.
- Sift the flour, cocoa, baking soda, baking powder, salt and spices together.
- Cream the butter until it lightens in texture and color. Add the sugars; cream until fluffy. Add the sour cream and molasses; beat well. Add eggs one at a time; blend well, then stir in the fresh ginger and dry ingredients until combined. Scrape into 9" square baking pan.
- Bake until a toothpick in the center comes out clean, 25 to 30 minutes. Let cool for about 10 minutes, then cut into squares and sprinkle with confectioners' sugar.
