Hawaiian Fruit Cake

Recipe Introduction
Luscious cream cheese frosting tops a moist cake.
List of Ingredients
- 2 cups flour
- 2 cups sugar
- 2 tsps baking soda
- 1/2 tsp salt
- 2 T butter
- 2 eggs, well beaten
- 1 (20 oz) can crushed pineapple
- FROSTING:
- 1 (8 oz) pkg cream cheese, softened
- 1/2 cup butter, softened
- 1 tsp vanilla
- 1/4 tsp lemon extract
- 2 cups confectioners' sugar
Instructions
- Preheat oven to 350. Grease and flour a 13x9-inch baking pan.
- Combine flour, sugar, baking soda and salt.
- Mix in butter.
- Add eggs and pineapple; mix well.
- Pour into prepared pan. Bake 35 to 45 minutes. Cool completely before frosting.
- To make frosting, beat cream cheese, butter, vanilla and lemon extract, gradually adding the confectioners' sugar. Refrigerate leftover cake.
