Italian Cream Cake

- 1/2 lb. butter, softened
- 1/2 cup shortening
- 2 cups sugar
- 5 egg yolks
- 2 cups self-rising flour
- 1 cup heavy cream
- 1 tsp. vanilla
- 1 cup coconut
- 1 cup chopped pecans
- 5 egg whites, beaten
- Cream Cheese Icing
- 8 oz. Cream cheese, softened
- 1/2 lb. Butter, softened
- 1 lb. Confectioners sugar
- 1 tsp. vanilla
Instructions
- Beat butter and shortening; add sugar; add egg yolks one at a time; add flour, heavy cream, and vanilla; mix in coconut and pecans; fold in beaten egg whites.
- Pour in two 8 inch pans or one spring form pan. Bake at 350 degrees for 45 minutes.
- Combine all ingredients and whip for cream cheese icing.
