    List of Ingredients


    • 1/2 lb. butter, softened
    • 1/2 cup shortening
    • 2 cups sugar
    • 5 egg yolks
    • 2 cups self-rising flour
    • 1 cup heavy cream
    • 1 tsp. vanilla
    • 1 cup coconut
    • 1 cup chopped pecans
    • 5 egg whites, beaten
    • Cream Cheese Icing
    • 8 oz. Cream cheese, softened
    • 1/2 lb. Butter, softened
    • 1 lb. Confectioners sugar
    • 1 tsp. vanilla


    Instructions


    1. Beat butter and shortening; add sugar; add egg yolks one at a time; add flour, heavy cream, and vanilla; mix in coconut and pecans; fold in beaten egg whites.
    2. Pour in two 8 inch pans or one spring form pan. Bake at 350 degrees for 45 minutes.

    3. Combine all ingredients and whip for cream cheese icing.
