    • CAKE:
    • 1 cup (2 sticks) butter, softened
    • 2 cups granulated sugar
    • 5 eggs
    • 2 cups all-purpose flour
    • 1 tsp baking soda
    • 1 cup buttermilk
    • 2 tsps pure vanilla extract
    • 1 (3.4 oz) can angel flaked, sweetened coconut
    • 1 cup nuts, chopped
    • FROSTING:
    • 1 (8 oz) pkg cream cheese, softened
    • 1/4 cup (1/2 stick) butter, softened
    • 1 (16 oz) box confectioners' sugar
    • 1 tsp pure almond extract


    Instructions


    1. Preheat oven to 350 degrees. Grease and flour three 9-inch cake pans.
    2. Using an electric mixer, cream together butter and granulated sugar.
    3. Add eggs one at a time, beating well after each addition.
    4. Stir together the flour and baking soda.
    5. Add alternately with buttermilk to sugar mixture, being sure to begin and end with flour.
    6. Stir in vanilla, coconut, and nuts.
    7. Pour into prepared pans. Bake for about 30 minutes, checking cakes after 20 minutes. Allow to cool 5 minutes in pans. Invert onto rack and cool completely.
    8. Meanwhile, to prepare frosting, cream together cream cheese and butter. Add confectioners' sugar and almond. Beat until smooth. Stack cakes into 3 layers; spread frosting between layers.
