- CAKE:
- 1 cup (2 sticks) butter, softened
- 2 cups granulated sugar
- 5 eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 cup buttermilk
- 2 tsps pure vanilla extract
- 1 (3.4 oz) can angel flaked, sweetened coconut
- 1 cup nuts, chopped
- FROSTING:
- 1 (8 oz) pkg cream cheese, softened
- 1/4 cup (1/2 stick) butter, softened
- 1 (16 oz) box confectioners' sugar
- 1 tsp pure almond extract
Instructions
- Preheat oven to 350 degrees. Grease and flour three 9-inch cake pans.
- Using an electric mixer, cream together butter and granulated sugar.
- Add eggs one at a time, beating well after each addition.
- Stir together the flour and baking soda.
- Add alternately with buttermilk to sugar mixture, being sure to begin and end with flour.
- Stir in vanilla, coconut, and nuts.
- Pour into prepared pans. Bake for about 30 minutes, checking cakes after 20 minutes. Allow to cool 5 minutes in pans. Invert onto rack and cool completely.
- Meanwhile, to prepare frosting, cream together cream cheese and butter. Add confectioners' sugar and almond. Beat until smooth. Stack cakes into 3 layers; spread frosting between layers.
