    • 1 1/4 cups graham cracker crumbs, about 9 crackers
    • 2 T sugar
    • 5 T unsalted butter, melted
    • 1 (14 oz) can sweetened condensed milk
    • 4 large egg yolks
    • 1/2 cup plus 2 T fresh or bottled Key lime juice
    • zest of 2 key limes (1 lime can be substituted)
    • 1 cup heavy cream
    • 1 tsp pure vanilla


    Instructions


    1. Preheat oven to 350 degrees.
    2. Mix graham cracker crumbs, sugar, and butter in a medium bowl with a fork. Press mixture evenly onto bottom and sides of a 9-inch glass pie plate. Bake crust 10 minutes. Transfer to a wire rack to cool.
    3. In a medium bowl whisk together condensed milk and yolks. Add juice and zest, whisking until mixture thickens slightly.
    4. Pour filling into crust and bake 15 minutes. Transfer to a wire rack and cool completely. Filling will set as it cools. Chill, covered, at least 8 hours.
    5. Using the bowl of an electric mixer fitted with a whisk attachment, whip cream and vanilla just until stiff peaks form. Top pie with cream and serve.
