Lemon Delight Cake

- 1/2 cup shortening
- 1 cup sugar
- 2 eggs slightly beaten
- 1 1/4 cups sifted all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/2 cup finely chopped nuts
- juice of 1 lemon
- 1/4 cup sugar
Instructions
- Cream the shortening with 1 cup sugar. Mix in the eggs.
- Sift together the flour, baking powder and salt.
- Alternately add the flour mixture and milk to
the shortening mixture; stirring constantly. Mix in the nuts. Pour in to a greased 9 by 5 inch loaf pan.
- Bake at 350 for 1 hour.
- Remove from the oven. Poke holes in the top of the cake with a fork.
- Combine the lemon juice and 1/4 cup of sugar. Pour over the cake.
